I went to a decentralized rally for Bernie Sanders tonight.
I really want to get this septuagenarian, democratic socialist, plain spoken, Jewish New Yorker from Vermont into the White House as POTUS. I then want to hear him mumble a little Yiddish at the swearing in, but but that's just me being selfish.

I have not used my journal for political purposes very much. I will do so more often for the next several months, and I will use a politics tag for such posts.

To quote Bernie, enough is enough.
I am tired of status quo American politics.
It's time for the old white guy who treats people with respect.

Finally, a way for me to fully enjoy Christian hymns [Jul. 25th, 2015|09:03 pm]

I have a juvenile mind. Also, I am slow because I should have realized this a few decades ago. Since I am about to share, and it is decidedly blasphemous to Christianity, I apologize in advance to my Christian friends, though I suspect several had the brainstorm some years ago, and will place the relevant bit under a cut.

We are currently watching the TV play radio, specifically "Says You" on WGBH. It's a rerun from when Richard Sher was still alive. Yes, he died earlier this year.

But back to the point. The musical guests sang during the bits where the teams have to guess the right definition of a niche word from the other team. The group in this case sang Christian spirituals. I realized, after the first song, [Spoiler (click to open)]that you could replace Jesus with "penis" for the same scansion but considerably more amusing music, and that such music did not have to be quite so omnipresent with a small tweak.

As I said, I am a bad, bad man. And very slow on the uptake sometimes.

You had an amazing run, and you ended the show beautifully. And I have to say, there's no way you could have gotten all of those previous guests into your studio unless they liked you a whole lot or you blew a missing pallet of dollars we shipped to Iraq. And while we know you're fabulously wealthy--as you keep saying on Colbert Platinum--I'm going to assume it was the former because CBS prefers their late night hosts be financially secure enough that they can stop selling crack in the green room.

That's as spoiler-filled as I'm going to get. I won't cry for you, Stephen, just like I wouldn't cry for Argentina. All I can do is smile and bid farewell to my absolute favorite American Idiot-Savant.

It's been unreal. And thank G-d for that.

On "Real Time with Bill Mahar" tonight, Bill Mahar talked about the militarization of the police over the past 40 years. He brought up how crime was at historic lows, but the police looked less like the sheriff's department in the fictional town of Mayberry and more like something you'd expect in a war-zone, complete with attitude.

He ended his polemic with this little address to the political right, which keeps talking about Freedom going away: "You're always screaming about the loss of liberty and how tyranny is coming. Yeah, it's coming right through the door! With a battering ram, no warrant and a stun grenade. Or to put it in a way you can understand, I'm scared of the cops, and I'm white."

Now, Bill Mahar is well known for his cannabis advocacy and he routinely talks about smoking pot on TV in front of a national audience. However, he has many things going for him: he's a cisgendered man, straight, very visible, in his 50s, has his own TV show, I believe his own production company, has good ties to a variety of powerful people, and has a decent pot of money.

And he's scared of the police. He mentioned that he feels a lot of police are fine, but there are some bad apples. (Does he read this blog?) He spent a small chunk of his monologue trying to sweet-talk the next police officer who pulls him over: "...You're fine. And handsome! And I rarely say that to a man ... And let's just both agree that the strong smell coming from my car is a skunk I rescued on the road, brought into the vet a few days ago."

If someone as set up as Bill Mahar is scared of the police, might it be reasonable for other people who are not in groups considered high profile by the police to be scared of them?

Police who in the main maintain their power by intimidation lack legitimacy. If they want people to trust them, they have to show that they can be trusted with their expanded authority, including authority to use force. This is not an easy job, no, but it should be one that they try harder to do in those places where they don't. The fact that police abuses happen every day, in more states than not, is worrisome.

One of the recent flaps that has gone back and forth between real life and online has tangentially brought up attitudes toward the police. One of the important things about modern civic police forces is that they gain their legitimacy through fair, nondiscriminatory and effective police work. So, I wanted to ask people at large.

I'm currently watching The Daily Show and The Colbert Report. On the shows, Dish Network has an ad that has stopped me from fast-forwarding. They have an extremely attractive lady dressed in Brazilian festive dance gear--pretty much a red bikini with sparkles and a feathery plume (peacock style) of the same color--dancing.

I cannot stop watching her dance. It looks like a combination of salsa, bellydance and hula, and it is amazing.

OK, yes, she's attractive and not wearing very much, but you should see how this woman moves! When is she coming to Boston to dance, I ask you?

I am only slightly tongue-in-cheek about this.

Mr. Oliver, not one to shy away from mocking dangerous people from a safe distance--a good survival trait--decided to... well, maybe you might want to watch, though it's NSFW due to language. If you don't like news of dictators, skip it. Or go visit and see a song get filked around by its original performers.

On the subject of natal days [Feb. 15th, 2014|01:56 am]

There are several people on this journal who celebrate natal days today (waves to tendyl and meglimir), but today I stand to recognize one natal day in particular.

Some years ago--how many I will not say because I'm a gentleman what knows manners, but let's go by other conventions what I know and say 29--two brunettes bore witness--one rather directly--to the birth of their first and only immediate redhead. They were amazed that her hair did not fade toward brown or blonde, instead maintaining a fiery tone that only occasionally matched the old scuttlebutt about redheads. Over time they raised her, then eventually let her go out into the great wide world--sometimes Earth, but for a while Pern with a brief stopover at Brandeis. Through all this, her ginger hair has not lost one iota of its redness.

Currently she is softly snoring and hopefully having sweet dreams. I successfully made a Wisdom check and decided not to wake her, so this will be but the second time I say the following to her: Happy Birthday, tigerbright. May the year bring you great health, freedom from much stress (in good ways), much love and sweet dreams.

Also, enjoy your birthday prezzie :P

Happy St. Valentine's Day Massacre Memorial Day [Feb. 14th, 2014|03:22 am]

I believe this is the day we celebrate St. Valentine by transubstantiating somewhat melty chocolate and fragile flowers into the blood and body of St. Valentine. And then we eat the chocolate, but not the flowers unless we were lucky enough to get some of those edible flowers you can find in a few backyard gardens or some nice little corner restaurants. Chocolate blood makes most of us give in to our inner cacaoic vampiric urges. On an unrelated note, "cacaoic" is now my new 3 C Boggle word. Seriously, I had no idea it was a word until the chellspecker didn't flag it.

To those who celebrate it as a serious holiday, I hope you have a good Valentine's Day.

On the subject of Pussy Riot [Feb. 14th, 2014|12:46 am]

Tonight's The Colbert Report is an encore of its February 3 show. Two things strike me about the interview: 1) the two members being interviewed who supposedly know no English responded more than once to Stephen Colbert's questions without their translator relaying the question to them first, suggesting that they understand more English than they are letting on in public; and 2) Mein Gott those activist ladies are gorgeous.

The payoff of the show comes with the closing scene, where Stephen Colbert sends a message to Vladimir Putin on camera--"You leave those girls alone!"--right before donning a Pussy Riot-style neon lime-green balaclava.

I'm tempted to get me a balaclava, take a selfie and give it the legend, "I stand with Pussy Riot."

So. This morning I called up Audible about my name listing. They said they couldn't do anything about it, but to call a different number. The organization they sent me to is ACX. When I reached them, the voice system got me to an actual human after only one prompt. They initially were unsure of what they could do as the project was strictly through Audible, but I asked nicely. OK, I said, "I'm begging you." I told them both of the titles where my name was misspelled, and they told me they figured it would be fixed in 1-2 business days.

My name has already been corrected. I am a happy puppy.
Now if my payment will finally get here...

Apparently, despite the huge amount of propaganda in the US saying our health care is the best in the world, Americans don't really think so. And by objective measures, most of the health care we provide is middle of the pack to substandard.

If you think we need a change and haven't signed it, there's a MoveOn petition that needs your signature for an incremental step in the right direction. If we want people to have a public option, at least, this is a means of putting it on the agenda.

The audiobook I've been working on, the one about Texas, has a number of quotes from various people. Some of those quotes include words... I really do not care for.

[Cut for extreme profanity. Really, none of you have heard me swear like this. I am not kidding!!]
Now, I really don't give a shit what kind of fucking language people use so long as they're showing some fucking respect. Shit you say normally, who the fuck cares? And historical shit, well, shit happens.

But when some cocksucking motherfucker is quoted to fucking demonstrate just how fucking annoying he was, then I give a shit. The shit-for-brains fucktard in question, who'd made himself pretty fucking rich and then went on to be a right royal fucking bastard of a politician--the only governor impeached in Texas, for fucks sake--compared his impeachment for being such a dickwad... to the treatment given poor, discriminated-against, unfortunate black people. He said he had it fucking worse than a people kept from voting, used as political scapegoats, and commonly beaten up and fucking killed. Total myopic fucking asshole. And you can guess the word he used for said black people pretty fucking easily.

I'm sure I'll be stuck saying it a few more times for the audiobook, but I have to get it the fuck out of my system somehow.


And that is possibly my allotment of swears for the past decade. I generally prefer more inventive invective, but this once I had to get it out of my system. It was this or gargle (and spit) with single-malt.

For people who were not paying attention, one congressional district in Massachusetts, the 5th district ("The Fightin' Fifth!"), will hold a special primary on Tuesday October 15. If you are not currently registered to vote then it might be too late to do so--please check with your local town or city clerk's office. However, if you are registered to vote but will be unable to vote in person due to travel or disability, Don't Panic. All city and town clerks must accept requests for absentee ballots for this special primary election up to 12 noon on October 14. Please get in your requests early, though!

This was an attempt to make something akin to the citrus chipotle sauce used at the various Wings Over places. I have not asked anybody there for hints; this is just my own first attempt, including all the additions I made at various points. I thought I had chipotle pepper powder in the house but was mistaken. If I'd had chipotle I would have cut the ancho and paprika in half and added two teaspoons of chipotle.

So, before I forget all the proportions I carefully measured for once:

1/2 cup water
1/2 cup sugar
juice of 1 fresh lime (about 1/4 cup)
1 oz orange juice
1 tablespoon maple syrup (this was grade b, which is fine--or you could use corn syrup, or half the amount of molasses)
2 teaspoons arrowroot powder
2 teaspoons mustard powder
2 teaspoons ancho pepper powder
1 teaspoon hungarian half-sharp paprika (sweet paprika would be milder if you want milder)
1 teaspoon salt (Kosher in this case)
1/2 teaspoon white pepper powder
1/4 teaspoon powdered ginger
small pinch of garlic powder
pinch of malt powder
(EDIT) Forgot to mention: dash of cinnamon, 1/4 teaspoon dried powdered lemon peel.(/EDIT)
1/2 teaspoon wine (I used golden sherry)
1 drop oil (I used grapeseed)

Equipment:
small saucepan, wire whisk, measuring spoons, tasting spoons as needed, rubber spatula for removal

Over medium heat, bring the water and the sugar to a low boil. Whisk until the sugar melts into the water, forming a simple syrup, then reduce to medium low heat. Whisk in the lime juice, orange juice, wine, oil and maple syrup, then add all the other ingredients except the arrowroot powder. Turn heat to just above low and let simmer without bubbling for 10-15 minutes, whisking occasionally. Add arrowroot powder and whisk thoroughly, reducing heat to low. When mixture is thickened, remove and put in a container of your choice for immediate use or easy storage.

(EDIT) I had my wife try a bit, and she declared it needed more lime. To the thickened mixture I added juice of one more lime, which made it considerably less thick--mine was thicker than maple syrup before the lime, now it's about the same thickness. I'm going to give it a day sitting in the fridge for the flavors to meld, again per her advice.

It is a little gritty but I'm not sure how to make it smoother. I don't think an immersion blender will further chop down powdered spices, after all. (/EDIT)

(SECOND EDIT) Two days later I added about an ounce of straight cranberry juice (not a blend or fruit cocktail) to the mix and stirred it in. The flavor was much better as a result.

Next time I will have chipotle, I will use less simple syrup, and I'll cook the spices in a little longer. (/SECOND EDIT)

I started watching NTSF:SD:SUV late last year, a live action show in Cartoon Network's Adult Swim block. They get a lot of faces from all over playing all sorts of roles that are counter to what they usually do.
They have a new regular member on the NTSF:SD:SUV team. Her off-camera name? Karen Gillan.

I expect a spinoff series of NTSF:Earth:TARDIS any year now.

DOMA is not gone [Jun. 27th, 2013|11:02 am]

I've seen a lot of posts here about DOMA being struck down and people being glad about that.

DOMA has not been struck down. I repeat, DOMA has not been struck down. When I mentioned yesterday that there was a ruling, I mentioned Section 3 was struck down. The other parts of DOMA are still in effect. dpolicar has some insights you might want to read if you are willing to see a well-written rant.

Article 3 of DOMA disallowed the federal government to recognize a same-sex marriage as a marriage for the purpose of any federal benefit. This is big. This is spousal benefits. This means somebody can have their foreign-born spouse get a green card regardless of gender.

However, there are still a lot of things this ruling did not cover. The Full Faith and Credit clause of the Constitution is still not in force for same-sex marriages, meaning that a same-sex married couple traveling to Texas or Oklahoma would be treated as unmarried in the eyes of the state. Never mind that an opposite-sex couple married in another state under guidelines that would be illegal in Texas or Oklahoma would still be counted as married in all 50 states; same-sex couples still are not.

The ruling overturning California's Prop 8 also was not as sweeping as it could have been. The justices could have stretched a little, if they wanted, and made it illegal to stop a two-person marriage regardless of gender throughout the entire 9th Circuit Court of Appeals territory, which would have made gay marriage legal in 8 states. They kept the ruling to just California, which was a conservative move on the part of the slim majority. I suspect that Justice Kennedy would not have welcomed a wider ruling, and he was both the most conservative member one of the most conservative members of the 5-4 majority and the author of the majority opinion. Ahh, he was author of the opinion in DOMA. Apologies. Roberts authored the opinion in Hollingsworth, and Scalia joined the majority for this ruling. Sotomayor, interestingly, was in the dissent. I need to see if she had an individual one.

There are still many more steps to go. Don't be disheartened. We have moved forward on this, just not as much as we wanted. Just... don't lose sight of the fact that we still have a ways to go. There are more victories on the horizon, and they will move much closer to Main Street soon enough.

Breaking News: Section 3 of the Defense of Marriage Act is overturned in a 5-4 decision. Federal benefits for same sex couples should now be affirmed. Kennedy was the swing vote here.

First, congratulations to Senator-elect Ed Markey, who will hopefully be seated before the August recess. We will soon have the fun of a race for Congress in his current seat. I am keeping fingers crossed for a candidate I met last month. I know he'll make a fine senator.

On to the meat: today yesterday the Supreme Court, in a 5-4 decision, overturned one section of the Voting Rights Act of 1965, specifically the section which determines what states, counties or cities need to submit plans for approval when making a change to voting districts. It's not a specific list of places; there was a formula, and many states in the South fall into the old formula rather handily. Since there is now no way to determine what places fall under the mother-may-I section, this makes the other sections involving enforcement moot.

However, that's not what I'm writing about. The decision of the very bare majority, as mentioned by Amy at SCOTUSBlog, reads much like this:

But today, fifty years later? Not so much. In the Court’s eyes, “things have changed dramatically.” When judged by a variety of measures – such as voter registration, voter turnout, and the number of African Americans elected to office — conditions have improved significantly in the states that are covered by the preclearance requirements. The Court agrees that these changes “are in large part because of the Voting Rights Act”; despite those improvements, the Court complains, the formula that determines who must comply with the preclearance requirement is “based on decades-old data” and practices – such as literacy tests – that were long ago abandoned. Because it isn’t fair for Congress to “rely simply on the past” to single out a few state and local governments for unequal treatment “based on 40-year-old facts having no logical relationship to the present day,” the coverage formula cannot stand.


Here's what bothers me about this line of reasoning: it says that, since there are clear improvements because the law is being followed, that there is no major need for the law to stand as it currently is. In short, we followed the law so well that until Congress can update the law, we don't need to follow it.

They are talking about the right of factions controlling local and state governments to steal away suffrage--in effect, to steal your vote. "Well, the leaders in those places haven't stolen it as much in the last four decades, so we should look at where we used to worry about it and redefine how we figure it based on Twitter feeds and Cheetos consumption. Oh, and in the meantime? They can steal your vote. Pass the pork chops, I need me some sweet bacon." Yes, I do think at least one justice does not know the difference between smoked pork butt, pork chops, and stealing away a non-white person's vote. "Pass me some more Somebody Else's Suffrage, it goes great on pancakes!"

Imagine this used as a pretext for any other law. No, seriously, imagine it. Imagine that with falling murder rates (they have dropped off dramatically in New York City, among other places) we need to update our definition of murder, so in the meantime we don't need to enforce the laws against murder until we've made sure we've updated the definition. Imagine it with rape--the definition with that actually isn't the same at state and federal levels, and does vary somewhat from state to state. Penny Arcade (ugh, not linking), go sarcastic! Imagine it with torture. OK, don't bother imagining, we lived through that.

The only thing which I see as any sort of silver lining, the only thing, is that since the Court basically said that the definition needed to be redefined based on more current definitions and usage and principles, that this argument could be used against the right-wing justices in potential future cases regarding same-sex marriage. This is assuming that the court decides that the Defense of Marriage Act should still stand, a decision a true conservative should rail against. Of course, we'll find out their decision before noon. I hope they overturn DOMA, but I fully expect the five more conservative justices to vote as a bloc and say that the institution of marriage should be as it is now in the US, which is the same as it has always been before and the way it still is everywhere, hallelujah, pass the pork chops. I hope they pleasantly surprise me; I am not holding my breath.

Right now, at least two of the more right-wing justices are waiting for the next election to bring in a Republican before they voluntarily step off the bench. I'm thinking of Scalia and Kennedy, though Kennedy is a very occasional swing vote. I know they're waiting. For all that Obama has disappointed me in many, many ways, I want a Democrat in office in 2017 in part so they have to keep waiting. With any luck, they might decide they shouldn't do what prior Chief Justice William Rehnquist did: work til he died.

Republican Party leadership is in a tough spot. Demographics are against them, with their older voters dying off and newer voters more likely to vote Democratic. Rage fatigue is against them, as the dissonance between what they say and what they do is coming into ever-sharper relief. Even the truth is against them, given how many times they've lied and distorted facts just to score cheap points (Benghazi is the worst scandal ever? Really? Did you completely forget what happened in September of 2001? Or the money hoovering of Enron? Or the Vietnam War? Or Iran-Contra, where laws were broken by the President? Or freaking Watergate?) I won't defend Democrats doing those things, but there are differences of both degree and scale. It's an occasional hobby for some relatively small minority of Democrats in leadership; it's a way of life for a large majority of Republican leadership.

I hope the justices show some wisdom this morning.

Wednesday of this week we finally replaced our old TiVo HD.

We're long-standing TiVo users in our home. I know people who have had it for longer, but I can say we've had it for nearly a decade now. For the past couple of years our TiVo HD had been behaving badly: freezing and rebooting in the middle of watching a show, freezing in the middle of a recording, things like that. So, after checking our admittedly-stretched budget, we decided we should probably see what we could do about replacing it. I mean, freezing and rebooting multiple times a day is not normal. I called TiVo a bit over two weeks ago, we got a replacement box sent out at some charge to us (but not as badly as buying a new one), transferred service over, and that's that, right?

Well... no. For one thing, there's no easy way to transfer shows from one TiVo to another. As in, if they aren't both of the current generation you can't really do it. For another, they didn't have the easiest way of transferring over the Season Pass list. For yet another thing was actually setting up the new box and making sure everything works. For a fourth, the TiVo would work better hooked up to the router via Ethernet cable than via our old Wireless G network connection...

I've sporadically agitated for several years that we move our cable modem and network setup down to the living room from its old location on our second floor. My wife objected previously that she worried about the signal strength going down in our room or that we had no space downstairs, but this time she said, "So long as you do it."

So I did, and that was that, right?

Well... no. I did bring everything downstairs, found that I would need slightly more space than I could justify at the TV cart, brought over our small coffee table as an interim measure, then found I'd need one more coaxial cable, and went rummaging. All the while my little lion was being remarkably patient, moreso for it being her. I think she was tired of the TiVo regularly interrupting her regular show. As the kids have been putting their feet up on it every now and again I figured it was OK to let it semi-retire. I started setting everything back up, got a bit distracted by my daughter at a point when things were wobbly, and the heaviest hard drive we have slid off the table and landed on one of its rounded points on my left foot.

Ow. Ow ow ow ow ow! ow ow. My little lion was nowhere near the table at the time, but given the weight I'm just glad it landed on my foot instead of hers.

There was more trouble trying to get the Season Passes moved over, and the old box actually did give up the ghost when I tried plugging it in one last time, and and and... heck, I still haven't hooked up the extra external storage as I'm not sure if it exacerbated the problems with the old TiVo. I probably should try it while the new TiVo is still under warrantee.

Still, now we have a splufty new TiVo merrily recording shows, our network's flashing lights no longer wake up our son, and my family is much happier about that.

I think I need to go to the doctor's office come Monday as my foot still hurts.

This evening my family was discussing the actors on White Collar and their ages vs their characters' ages. We were wrong on Matt Bomer (in his 30s) but when it came to Tim Dekay, both my wife and Auntie B thought he was only a little older than each of them. I said, "No, he's close to 50." So I went to IMDB.

Today is Tim DeKay's birthday. He is 50.

Today is Memorial Day.
Most of us are grateful for the day off of work, or at least the extra pay if we're stuck going to work. Some people like the parades in their towns. When I was little, these were the only things I really thought about on Memorial Day. I didn't think about where it came from.

Memorial Day was started to remember the military men who fought and died in the US Civil War, men on both sides of the conflict. Since then, it has grown to encompass the memory of all the service men and women who have fought and died while serving in the US Armed Forces. New inductees are admitted to that club regularly, sad to say.

Memorial Day, to me, is the day we should remember the people who put on military uniforms and fought for our country--and died. They died fighting for our country. Sometimes they gave their lives for something noble, like stopping the Nazi regime or to end slavery. Usually it wasn't so noble, such as maintaining power for certain interests that would be inconvenienced otherwise--for example, slaveholders or Standard Oil. The same war often had the full spectrum of reasons, from the noble to the greedy to the foolish to the tragic. The thing is, none of the soldiers got to choose which war to fight in once they put that uniform on. They gave up their choice so all the rest of us would be free to make choices we might not otherwise get.

It's a grim sacrifice, the one they made, and some of them had no idea just how much of a sacrifice they were making when they joined the service.

And yet, in one way, I feel it is still too limited a day. There are many people who are public servants who are not part of the military who also die on duty. Some of them are regularly expected to deal with danger as part of their jobs, like police officers and firemen and government agents. Others are not, like teachers and social service counsellors and park service rangers and even *sigh* politicians. I would like to remember the teachers who died trying to save their students, the firefighters who died trying to save people from burning buildings, the non-official cover CIA officers who died for our country--even trying to do even the dirtiest covert operation. All of them stepped up to serve, promote and protect our country, even if not in the same way as our military. Their deaths in the line of duty should be remembered too.

So. On this day, when the weather is comfy and stores are holding sales and neighbors are grilling burgers, I ask that you spare a few moments to remember the people who have served our country. They may or may not have willingly given their lives, but they gave them anyways, and no person can truly give a greater sacrifice. I will be doing so throughout the day at various points.

One more thing. Enjoy your day. We do not live for the dead even when we honor them. Cherish the living, both the verb and the noun.

I am currently still quivering with fear, adrenaline and anticipation.

Today I had an audition at a company that does educational voice work--everything from K-6 through corporate training videos. I arrived a little early (better early than late!) and chatted a bit with the president, Steve. He brought up politics before I did, and he's of a mind with me unless he's a very good actor. Which he might be, but I'm not into suspicion first.

Anyways, I digress.

He had me read six different kinds of scripts, from a learning to read script to a science textbook for 6th graders to corporate training to corporate pump-'em-up. At the end of the session, he told me he'd given me 9s and 10s for both accuracy and voice quality for every single segment.

This does not mean I have definite work. However, I am cautiously optimistic. If I become one of his regular stable, and one of his go-to people--both very much still Ifs, but not outside the realm of possibility--I will be an extremely happy voice actor. Two full shifts a week would mean we are no longer worried about the cost of attending an out-of-town convention, or the occasional babysitter for a night out.

Eyes, fingers and toes crossed. And boy it's hard to type!

Shopping Sadness: Rosebud in Malden is closing [May. 1st, 2013|10:41 am]

After a little bit of a runaround yesterday I stopped by Rosebud to see about getting some fresh spinach. When I got there I saw a sign: 25% off (not including perishables). The store is closing for good at the end of May 11.

They don't carry organic produce, but they always carry good fruits, vegetables and fungi that were fresh and tasty. Shopping there was easy, quick, and good for the wallet.

I am going to miss them. Rumor has it that the new business there will be a restaurant. The retail spaces built next door, which look to be better for a restaurant, apparently have hideous rents--I'm talking downtown-in-a-city-with-lots-of-foot-traffic rents instead of out-at-the-edge-of-town-but-you-can-drive-to-it rents, which is what they should be charging.

I grew up regularly eating poached eggs. Mom would boil them, take them out with a slotted spoon and directly put them on toast, often with a little extra water making the toast soggy. I always needed salt, and sometimes they were overdone, but I always looked forward to them.

For me, toast with melted cheese has been an acquired taste. I never would eat it when I was little. My son might like it if he ever tries it, but getting him to try it will be tricky. However, I have found that while I like it slightly on its own, it's very good for use with other things I like.

This week I was scrolling through one of my Cooks Illustrated emails where one of their top TV and radio cooks (she's an excellent cook, and she has good TV presence) went over the test kitchen's best practices for making poached eggs. I tried it last week, buttering some toasted challah, and the eggs were wonderful but the butter muted the flavor. Yesterday I decided to put a little cheddar on the toast and melt it.

Wow.

Of course, it helps that I used some local-farm eggs, but still.

So, in order that other people might enjoy, poached eggs on challah toast with melted cheddar. The poached egg recipe is property of Cooks Illustrated, but the plating? That's me, and feel free to use it (and link to it).

Cooking time: 15 minutes
Equipment needed: 12" skillet with lid, slotted spoon, paper towel, sheet pan or toaster oven, one paper towel, one extra plate, coffee mugs as needed

The directions are roughly in the order I actually do them, because it takes a little multitasking in the overall single task of making the dish.

Turn your oven to 400ºF.
Fill your skillet about 2/3 full with water.
Add a splash (or no more than a tablespoon) of vinegar to the water; also add no more than 1 tsp. salt.
Start toasting your bread.
Crack your eggs and put them in a standard coffee mug, no more than two eggs per mug.
Bring the water in your skillet to a gentle boil.
Remove the water from the heat.
Bring your mugs down to nearly the surface of the water and gently pour in your eggs (maximum of 8 eggs aka 4 mugs worth).
Cover the skillet and let sit for 5 minutes.
Get out your extra plate and put the paper towel on it.
Put a thin layer of cheddar on your toast and put in your oven or toaster oven until the cheese has melted--I use a sharp cheddar for more flavor.
Remove the toast with cheese and plate.
When the eggs have poached for 5 minutes, remove them from the water with a slotted spoon and carefully put them on the plate with the paper towel, to wick away extra moisture.
After the extra water has been wicked away, carefully put your poached eggs on your toast with cheese. Salt as needed, but you shouldn't need much because the cheddar has a notable salt content.
